WThis is a simplified interpretation of a beverage from a new cocktail list. This is a batch pre-mixed that is bursting with the tastes of the festive period, rendering it perfect for hosting a holiday party. Save the extra cordial for breakfast cocktails, desserts, or to make additional servings of the drink.
The Bikini Cocktail
Yields 10 guests
Ingredients for the Clementine Cordial (produces 750ml)
300ml fresh clementine juice
200ml fresh lemon juice
500g fine sugar
To make the Premix (yields 850ml, enough for 10)
400ml premium vodka
100ml classic gin
150ml peach schnapps
200ml clementine syrup (from the recipe above)
Whole cranberries, as a garnish
Mandarin essential oil, as a final touch
Instructions
To prepare the Syrup: Put all the components in a pot, bring to a simmer, stirring to dissolve. After that, turn off the heat allowing it to cool down completely. Decant to a clean bottle, seal and store in the refrigerator, it will last for about four weeks.
For the Batch Mix: Combine every spirits and syrup into a big jug, allow it to infuse for one hour, then filter it preferably using a fine cloth, so it's perfectly clear.
To serve: Measure 85ml of your premix into a mixing glass filled with ice, gently stirring carefully for one minute to chill. Strain into an cold coupe glass or a similar vessel, top with the cranberries and complete it using a quick spritz of the essential oil over the top.
